MOST ranchers are small timers that support their ‘cowboy’ fantasy by other means. Making a living strictly from cattle is impossible when dealing with the Big Four Packers. When I was a kid we always had a freezer full of LOCAL beef. That’s what we need to get back to. Modern folks will have to gird their loins and watch an animal be butchered in their neighbors pasture as was done back to Adam and Eve, unless you are like the Bundy’s and graze Public Lands into dirt with cheap grazing fees. I know, because cattle wore my brand in 9 states. I had a millionaire sister subsidize me.
The fact is that climate won’t allow America to play cowboy anymore. It’s going to cost you to eat beef anyway you go. South America has long pumped their cattle full of toxic crap to combat the heavy parasite load in hot climates. Cattle sell by WEIGHT, so growth hormones and pesticides are about getting MORE money by weight.
The “mystery meat” deal happened when a billionaire/rancher from South America visited Trump in the White House. It helps that he is also a large donor to Trump. So, here we are back to 1905 and the tricks of the rich and the Meat Packing Industry, as Paul Krugman just wrote:

she sent it off to Packing town, and now it’s labeled chicken.”
